Pumpkin Blondies
1 cup butter, room temperature
2 cups light brown sugar
1 Tablespoon pumpkin pie spice
1/4 teaspoon salt
2 large eggs
1 cup pumpkin puree
1 1/2 cups all-purpose flour
1 1/2 cups pecan halves, toasted
1 12-ounce bag semi-sweet chocolate bits (I would only use half the bag)
Pre-heat oven to 350F. Line a 9x13 inch baking pan with parchment paper and lightly spray with cooking spray. In a large bowl cream together the butter and brown sugar. Add the pumpkin pie spice and salt and blend. Add the eggs and pumpkin puree and blend until smooth. Mix in the flour until fully incorporated. Stir in the pecan halves and chocolate bits. Spread into prepared pan. Bake for 20-25 minutes until the top is lightly browned and the center is set. Cool completely before cutting into squares.
